Gazpacho Shrimp

If you're fishing for a great-tasting seafood dish, this shrimp dish is full of flavor—thanks to the fact that we went a little overboard on the CHI-CHI'S® Salsa.

2 (16-ounce) jars CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium

1/2 cup diced (1/4 inch) yellow bell pepper

1/2 cup diced (1/4 inch) cucumber

2 tablespoons lime juice

2 tablespoons sliced green onions

1 pound fresh or frozen medium raw shrimp, peeled and deveined

2 tablespoons chopped fresh cilantro

Hot, cooked rice or pasta

Cubed avocado


1. In large skillet, combine salsa, bell pepper, cucumber, lime juice and onions. Bring to a simmer over medium heat. Stir in shrimp. Cook and stir 3 to 5 minutes or just until shrimp turns pink. Stir in cilantro.
2. Serve over hot rice or pasta with Garlic Tortilla Chips. Garnish with avocado, if desired.
