1 tablespoon vegetable oil
1/2 cup chopped onion
2 garlic cloves, minced
1 cup chopped asparagus
1/2 cup Peleponnese® Sweet Pepper Strips , Roasted Florina drained and chopped
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
4 CHI-CHI'S 8-inch Flour Tortilla Soft Taco Size
1 cup shredded Monterey Jack cheese
CHI-CHI'S® Cheese Salsa, to serve
1. Heat griddle or prepare grill.
2. In large skillet, heat oil over medium-high heat heat. Cook onion, garlic and asparagus 5 minutes or until softened, stirring occasionally.
3. Stir in peppers and chilies. Spoon vegetable mixture over one half of each tortilla. Sprinkle with cheese. Fold tortilla halves over to cover filling.
4. Cook 4 to 5 minutes on each side or until golden brown. Cut each quesadilla into 3 wedges. Serve with cheese salsa if desired. Serves 4.
