Fiesta Tamale Pie

Don't put this easy-to-make pie by an open window or someone's bound to take it. It's made with sloppy joe sauce, salsa and diced green chilies for a pie that's to die for.


1 pound ground lean beef

1 (14.5-ounce) jar Not-So-Sloppy-Joe® Sauce

1 (11-ounce) can whole kernel corn with red and green bell peppers, drained

1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained

2 green onions, sliced

4 CHI-CHI'S® (10-inch) burrito-size flour tortillas

1 cup shredded Cheddar cheese

Sour cream

CHI-CHI'S® salsa


1. Heat oven to 375°F.
2. In large skillet, sauté beef over medium-high heat until cooked through; drain. Stir in Sloppy Joe sauce, corn, chilies and onions; cook until heated thoroughly.
3. In 10-inch pie plate, alternately layer tortillas, beef mixture and cheese, ending with tortilla. Bake 20 minutes or until heated thoroughly.
4. Cut pie into wedges. Serve with sour cream and salsa.
