Fiesta Taco Salad

There are ordinary taco salads. And then there's the Fiesta Taco Salad. A meaty, cheesy masterpiece of seasoned ground turkey, lettuce and shredded Cheddar and Monterey Jack cheese blend.


4 tablespoons vegetable oil, divided

2 CHI-CHI'S® 8-inch Flour Tortilla Soft Taco Size, cut into thin strips

1 (0.78-ounce) package CHI-CHI'S® Restaurante Seasoning Mix

1 (20-ounce) package JENNIE-O TURKEY STORE® Lean Ground Turkey

2 cups shredded lettuce

1 1/2 cups shredded Cheddar and Monterey Jack cheese blend

1 cup chopped tomato

1 cup corn kernels

1 (15.5-ounce) can black beans, rinsed and drained

2 tablespoons chopped fresh cilantro

1/4 cup CHI-CHI'S® Jalapeno Wheels


3 tablespoons lime juice

3 tablespoons vegetable oil

1 garlic clove, minced

2 teaspoons honey

1/2 teaspoon ground cumin


1. In large skillet over medium-high heat add 3 tablespoons oil. Cook tortillas strips in hot oil for 20 to 30 seconds or until golden brown. Remove to paper towel to drain.
2. In large skillet over medium-high heat, add remaining oil; add turkey. Cook turkey about 10 minutes or until browned, stirring occasionally. Add seasoning mix according to package directions; cool.
3. In large bowl combine turkey mixture, lettuce, cheese, tomato, corn, black beans, cilantro and jalapenos.
4. To make the lime dressing, in small bowl whisk all ingredients until combined. Pour over salad. Arrange salad on plates.
5. Top with tortilla strips.
