Fall Leaf Quesadillas
Celebrate the changing seasons with a fun-filled recipe so delicious, it puts the "mmm" in autumn.
1 (8-ounce) package cream cheese, softened
1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium, drained
1 cup shredded Mexican cheese blend
8 CHI-CHI'S® 8 inch Flour Tortilla Soft Taco Size
1 tablespoon vegetable oil or olive oil
1. In medium bowl, stir together cream cheese, salsa and shredded cheese; mix well. Spread 4 tortillas evenly with cream cheese mixture. Top with remaining tortillas.
2. Using large leaf-shape cookie cutter, cut each tortilla into large leaf.
3. In large skillet, heat oil over medium heat. Add 1 quesadilla. Cook, turning once, 3 to 4 minutes or until golden brown. Repeat with remaining quesadillas.
4. Garnish each quesadilla with sliced ripe olives, diced bell pepper and sliced green onions, if desired. Serve with additional salsa and sour cream, if desired.
