Double Chicken Fajita Tacos
Make your chicken fajitas more festive and flavorful with spicy, exciting CHI-CHI'S® Salsa.
1 tablespoon vegetable oil or olive oil
1 pound boneless, skinless chicken breasts
2 green, red and/or yellow bell peppers, cut into thin strips
1 red onion, cut into thin wedges
1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium, drained
1 (15-ounce) can refried beans, heated
6 CHI-CHI'S® 6 inch Fajita Tortilla
6 white corn taco shells
2 cups shredded lettuce
1 cup coarsely chopped tomato
1 cup CHI-CHI'S® Salsa Con Queso
1. In large skillet, heat oil over medium-high heat. Add chicken. Cook, stirring frequently, 3 minutes. Add bell peppers and onion. Cook, stirring frequently, 5 to 6 minutes longer or until chicken is no longer pink and bell vegetables are slightly softened. Stir in salsa. Cook 1 to 2 minutes more or until hot.
2. Spread about 2 1/2 tablespoons warm refried beans in center of each tortilla to within 1/2 inch of edge. Wrap tortillas up sides of taco shells.
3. Fill each taco shell evenly with chicken mixture; top with lettuce, tomato and salsa con queso. Garnish with additional salsa, if desired.
