Double Chicken and Bean Tacos

Make your chicken tacos more festive and flavorful with spicy, exciting CHI-CHI'S® Salsa.

Ingredients:

2 cups shredded cooked boneless, skinless chicken breasts

1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium

1 (15-ounce) can refried beans

6 CHI-CHI'S® 8 inch Flour Tortilla Soft Taco Size, warmed

6 yellow corn taco shells

1 cup shredded lettuce

1 cup chopped tomato

1 cup shredded Cheddar cheese

Lime wedges, to serve

Cilantro sprigs, to serve

Preparation:

1. In medium saucepan, combine chicken and salsa. Cook and stir over medium heat until heated thoroughly. 

2. In small saucepan, heat refried beans.

3. Spread about 1/3 cup refried beans in center of each tortilla to within 1/4 inch of edge. Place taco shell on refried beans in center of tortilla. Press tortilla up sides of taco shell; repeat with remaining tortillas, beans and taco shells.

4. Fill each taco shell with chicken mixture, lettuce, tomato and Cheddar cheese. Serve with lime wedges and cilantro, if desired. Serves 3
