Cornish Game Hens with Roasted Vegetables

While Cornish game hens are small, you can make their taste enormous. How? By slathering them in lively, spicy CHI-CHI'S® Salsa.


2 Cornish game hens, rinsed and patted dry

1 small onion, cut into 4 wedges

2 cloves garlic, cut in half

2 baking potatoes, each cut into 4 wedges

2 carrots, cut into 2-inch pieces

1 1/2 cups water

1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium

1 teaspoon dried oregano leaves

1/4 teaspoon coarsely ground pepper


1. Heat oven to 350ºF.
2. In 13x9-inch baking pan, place game hens. Stuff each hen with 2 wedges onion and 2 halves garlic. 3. Arrange potatoes and carrots around hens. Pour in water. Spoon salsa over hens and vegetables. Sprinkle with oregano and pepper.
4. Bake, basting hens occasionally, 1 to 1 1/2 hours or until internal temperature reaches 180ºF. to 185ºF. and juices run clear. Remove onion and garlic from hens. Serve with roasted vegetables.
