Chicken in Spicy Peanut Sauce
Give your chicken a bold new flavor and get your more bang for your cluck. Top it with a seductive and spicy peanut sauce mixed with CHI-CHI'S® Salsa.
4 boneless, skinless chicken breasts (1 1/2 pounds)
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 tablespoons olive oil
2 cups sliced onions
1 (16-ounce) jar CHI-CHI'S® Thick & Chunky Salsa Mild
1 tablespoon lemon juice
5 tablespoons peanut butter
2 cloves garlic
1. Rub chicken breasts all over with with cumin and cinnamon.
2. In large skillet, heat oil over medium-high heat; add chicken and onions. Cook, stirring frequently, until chicken is browned.
3. To make sauce, in food processor bowl fitted with metal blade, process salsa, lemon juice, peanut butter and garlic until smooth.
4. Pour sauce over chicken mixture in skillet; bring to a boil. Reduce heat to low; simmer 5 to 7 minutes or until chicken is no longer pink in center. Serve chicken with sauce and cilantro.
