Brown Rice-Barley Pilaf
Love pilaf? Next time you prepare some, use zesty, flavorful CHI-CHI'S® Diced Green Chilies.
4 cups beef broth or water
3/4 cup long-grain brown rice
3/4 cup pearl barley
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
1/4 cup pine nuts, toasted
1 tablespoon chopped fresh cilantro
2 teaspoons grated lemon peel
1. In large saucepan, bring broth to a boil. Stir in rice and barley. Reduce heat to low. Cover; simmer 40 to 50 minutes or until broth is absorbed and grains are tender. Let stand covered 5 minutes.
2. Gently stir chilies, pine nuts, cilantro and lemon peel into saucepan. Cook over low heat, stirring once or twice, 1 to 2 mintues or until heated thoroughly.
