Pork Carnitas


1 (1.25-ounce) package Chi-Chi’s® Taco Seasoning Mix

3 pound pork butt/shoulder, cubed

2 (12-ounce) bottles beer

8 to 12 Chi-Chi’s® Taco Style Tortillas, grilled

1 (16-ounce) jar Chi-Chi’s® Mild Pineapple Salsa

1 cup diced red onion

1 – 1 ½ cups sour cream

Lime wedges to serve


1. In large, deep skillet (14-inches) combine seasoning and pork. Cover with beer. Bring to boil. Reduce heat to medium-low. Cook, covered 2 to 2 ½ hours or until pork is very tender and almost all liquid is gone.
2. Spoon pork into warm tortillas. Top with salsa, onion and sour cream. Serve with lime wedges.
