1 ½ pounds ground beef or turkey (would 1 pound be enough)
1 ½ cups Chi-Chi’s® Mild Pineapple Salsa, divided
1 cup dried breadcrumbs
4 to 6 pineapple slices
2 to 3 jalapeño peppers, sliced
2 corn cobs, husks and silk removed
½ cup mayonnaise
1/3 cup chopped roasted red peppers
6 hamburger buns, split and toasted
½ cup cilantro sprigs
Lime wedges to serve
1. In large bowl, combine beef, ½ cup salsa and breadcrumbs. Shape mixture into 6 patties.
2. Prepare grill for medium-high. Cook patties 6 to 7 minutes per side or until cooked. Cook pineapple 2 to 3 minutes per side or until grill marks appear.
3. Cook corn 10 to 12 minutes or until char marks appear. Let stand until cool enough to handle. Turn corn cobs on ends. Run knife down cobs to remove kernels.
4. Blend or process mayonnaise and red peppers until smooth. Spread onto bottom of buns. Top with patties, pineapple, jalapeños, remaining salsa, corn and cilantro sprigs. Replace bun tops.
