Under 30 Minutes
1 ½ pounds ground turkey
1 (1.25-ounce) package Chi-Chi’s® Fajita Seasoning Mix
1 cup dried breadcrumbs
1 egg, lightly beaten
1/3 cup finely chopped cilantro
Salt and freshly ground pepper
2 red bell peppers, sliced
1 large red onion, thickly sliced into rings
1 (6-ounce) package Wholly Guacamole® dip
6 hamburger buns, split and toasted
6 slices pepper Jack cheese
1 cup Chi-Chi’s® Cilantro Salsa
½ cup cilantro sprigs
Grilled corn on cob to serve
1. In large bowl, combine ground turkey, seasoning, breadcrumbs, egg, cilantro, salt and pepper. Shape into 4 to 6 patties.
2. Prepare grill for medium-high. Cook patties 6 to 7 minutes per side or until cooked. Cook peppers and onions 2 to 3 minutes on each side or until char marks appear.
3. Spread guacamole onto bottom of each bun. Top with patty, 2 cheese slices, roasted red pepper rings, onions rings, salsa and cilantro sprigs. Replace bun tops. Serve with corn if desired.
