“Killer” Slow Cooker Turkey Tacos
These taste-filled tacos are stuffed with more excitement than a piñata. Made with tender JENNIE-O® turkey and CHI-CHI'S® Salsa. Everything's slow cooked to go fast.
1 (5-pound) JENNIE-O® bone-in turkey breast
1 cup diced onion
½ cup ketchup
2 (16-ounce) jars CHI-CHI’S® salsa
1/3 cup packed brown sugar
Salt and freshly ground pepper to taste
¼ cup lime juice
2 tablespoons canola oil
1 tablespoon sugar
Salt and freshly ground pepper, to taste
2 cups coleslaw mix
1 to 2 fresh red chili peppers, thinly sliced
¼ cup thinly sliced green onions
8 to 12 CHI-CHI’S® soft taco-size tortillas, warmed
2 avocadoes, sliced
1 1/2 cups crumbled queso fresco cheese or shredded Monterey Jack cheese, optional
Lime wedges to serve
1. In slow cooker, place turkey. Add onion, ketchup, salsa, brown sugar, and salt and pepper to taste; cover. Cook 4 to 6 hours on high or 8 to 10 hours on high or until turkey is very tender and pulls apart easily with forks. Reserve salsa mixture in slow cooker. Shred turkey; return to slow cooker.
2. To make Spicy Slaw, in large bowl, whisk together lime juice, oil, sugar, salt and pepper. Add coleslaw mix, red chili peppers and green onions.
3. Fill tortillas with turkey mixture, coleslaw, avocado slices and cheese if desired. Serve with lime wedges if desired.
