Festive Stuffed Peppers
What's the best way to stuff more flavor into your stuffed bell peppers? Make sure some of the stuff they're stuffed with is CHI-CHI'S® Salsa.
1 cup instant white rice
2 cups CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium, drained
1 (11-ounce) can whole kernel corn with red and green bell peppers, drained
1 cup shredded Cheddar cheese
3 not applicable large bell peppers
1/2 cup shredded Monterey Jack cheese
1. Cook rice according to package directions. In saucepan, combine salsa, rice, corn and Cheddar cheese. Cook over medium heat, stirring occasionally, 10 minutes.
2. Fill bell pepper halves evenly with rice mixture. Sprinkle with Monterey Jack cheese. Microwave on HIGH (100%) 3 minutes or until cheese is melted.
3. Spoon additional salsa over each stuffed pepper.
