Easy Chicken and Cheese Quesadillas
Make quesadillas with ease that aim to please. This recipe includes CHI-CHI'S® Salsa, shredded cooked chicken and cheese for a delightful dish the whole family will love.
1 cup cream cheese
1/2 cup CHI-CHI'S® Original Recipe Salsa Medium, drained
2 cups shredded Monterey Jack and Cheddar cheese blend
2 cups shredded cooked chicken breast
1/3 cup diced green bell pepper
6 CHI-CHI'S® (10-inch) burrito-size flour tortillas
1 tablespoon vegetable oil
1. In bowl, combine cream cheese and salsa; mix well. Spread tortillas evenly with cream cheese mixture.
2. In bowl, combine shredded cheese, chicken and bell pepper. Top half of each tortilla with chicken mixture. Fold tortillas in half over filling. Lightly brush both sides of tortillas with oil.
3. In large nonstick skillet or on griddle, heat quesadillas until hot and golden brown on both sides. Cut quesadillas into wedges; serve with additional salsa.
