Fiesta Skillet Dinner
It's easy to make a delightfully hearty dish that's full of color and flavor. This recipe uses JENNIE-O TURKEY STORE® Ground Turkey and CHI-CHI'S® Salsa for one tasty, festive feast.
1 (16-ounce) package Jennie-O Turkey Store® Ground Turkey
1/2 cup chopped red onion
1 clove garlic, finely chopped
2 cups quartered mushrooms
2 small bell peppers, cut into 1/2-inch strips
1 small zucchini, cut in half lengthwise and sliced
1 (16-ounce) jar CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
1/2 cup nonfat sour cream
4 cups cooked penne
1. In large nonstick skillet, cook turkey over medium-high heat until browned; drain. Add onion and garlic; sauté 5 minutes. Add mushrooms, bell peppers and zucchini; sauté 5 minutes longer. Stir in salsa.
2. Cover skillet; reduce heat to medium-low. Cook 10 minutes. Stir in sour cream. Add penne; mix well. Cook 3 minutes longer or until heated thoroughly.
