Chicken with Tomato Mango Relish
You say "tomato mango", we say "mango tomato". No matter how you say it, it's an irresistible mix of sweet fruit and spicy salsa together in one amazing recipe.
Notes: If mangoes are unavailable, 2 peaches, peeled, pitted, and cut into 3/4-inch chunks,
4 not applicable boneless, skinless chicken breasts
1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
1 mango, pitted, peeled and cut into 1/2-inch chunks
1 tomato, cut into 1/2-inch chunks
3 tablespoons sliced green onions
1/2 teaspoon grated lime peel
1 tablespoon fresh lime juice
2 teaspoons grated peeled gingerroot
1.5 teaspoons vegetable oil
1. In large recloseable plastic food storage bag, combine chicken and salsa; seal bag. Turn several times to coat. Place bag in 13x9-inch pan. Refrigerate, turning bag occasionally, 3 hours.
2. In large bowl, combine mango, tomato, onions, lime peel and juice, gingerroot and oil; mix well.
3. Heat broiler.
4. Remove chicken from marinade; discard marinade. Place chicken on broiler pan. Broil 7 to 8 inches from heat source 6 to 8 minutes on each side or until chicken is no longer pink in center. Serve chicken with tomato-mango relish.
