Watercress Salad with Scallops and Pears

We've given this simple gourmet salad a kick in the toasted pecans with delightfully spicy CHI-CHI'S® Salsa.


1 cup CHI-CHI'S® Thick & Chunky Salsa Mild

1/2 cup dry white wine

1/2 teaspoon minced fresh garlic

1 pound bay scallops

2 bunches watercress, washed, dried and stems removed

2 Bosc pears, cored and sliced

1/3 cup crumbled Gorgonzola cheese

1/3 cup chopped toasted pecans


1. In medium saucepan, combine salsa, wine and garlic. Bring to a boil; cook, stirring occasionally, 5 minutes. Add scallops. Cook 4 to 5 minutes longer or just until scallops turn opaque; drain. Cool.
2. Place watercress on large serving platter. Arrange pears around edge; place scallops in center. Sprinkle with cheese and pecans.
