Garden Gazpacho

Chillax at lunch with this tasty cold soup appetizer featuring zesty CHI-CHI'S® Salsa. Prepare it the night before so it's simple and ready to serve the next day.


3 cups chopped peeled seeded tomatoes

1 cup CHI-CHI'S® Thick & Chunky Salsa Mild

1 cup tomato or vegetable juice

1 cup boiling water

1/2 cup chopped peeled seeded cucumber

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped yellow bell pepper

2 tablespoons snipped fresh basil or 1 teaspoon dried basil leaves

1 tablespoon mild olive oil

1 tablespoon lemon juice

2 teaspoons Herb-Ox® Beef Instant Powder

1/4 teaspoon Bufalo



1. In large bowl, combine all ingredients except croutons; mix well. Cover; refrigerate several hours or overnight.
2. To serve, ladle soup into chilled bowls or mugs. Top each serving with croutons.
