Vegetarian Tacos
With these vegetarian tacos, you won't miss the meat. Because they're already packed with so much zesty and delectable vegetable flavor.
Ingredients:
1 (15-ounce) can refried beans
1 (10-ounce) package frozen whole kernel corn, thawed and drained
1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
1/4 cup chopped fresh cilantro
1 (6.25-ounce) package yellow corn taco shells, heated
1 cup shredded carrots
1 cup shredded jicama
16 CHI-CHI'S® Red Jalapeno Wheels
Preparation:
1. In large saucepan, cook refried beans, corn, salsa and cilantro over medium heat, stirring occasionally, 5 to 8 minutes.
2. Fill warm taco shells with bean mixture. Sprinkle with carrots, jicama and jalapeños.
