Sweet and Spicy Meatballs
You're invited to the mouth-watering marriage of sweet and heat. A deliciously inspired combination of fresh apricots and picante sauce.
1 large egg
1 1/3 cups CHI-CHI'S™ Smooth & Spicy Picante Sauce Mild, divided
1/2 cup tortilla chips, finely crushed
1/3 cup sliced green onions
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1 pound ground lean beef
1 tablespoon vegetable oil
1/2 cup apricot preserves
1/4 teaspoon chili powder
1. In large bowl, lightly beat egg. Stir in 1/3 cup picante sauce. Stir in chips, onions, salt, cumin and garlic powder; mix well. Stir in beef. Shape into 1-inch meatballs.
2. Lightly coat large skillet with oil. Brown half of meatballs over medium heat. Drain, if necessary. Remove from skillet. Repeat with remaining meatballs.
3. In same skillet, combine remaining 1 cup picante sauce, the preserves and chili powder. Cook and stir until blended well. Stir in meatballs. Bring to a boil. Reduce heat to low; simmer, stirring occasionally, 10 minutes. Serve meatballs with wooden picks.
