Southwestern Cornbread Stuffing
Give ordinary cornbread stuffing an extraordinary southwestern-style flavor, courtesy of zesty CHI-CHI'S® Diced Green Chilies.
1 cup thinly sliced onion
1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained
1 tablespoon chopped garlic
1/2 teaspoon coarsely ground pepper
2 tablespoons butter
1 1/4 cups chicken broth
1 (8-ounce) package cornbread stuffing
1 cup Hormel® Pillow Pack® 6 oz Turkey Pepperoni, cut into quarters
1/4 cup chopped fresh parsley
1. In large skillet, cook onion, chilies, garlic and black pepper in butter over medium heat 6 to 8 minutes or until onion is golden brown. Stir in remaining ingredients. Cook, stirring occasionally, 8 to 10 minutes longer or until heated thoroughly.
