Scrambled Bacon Burritos

Take the idea of breakfast burritos and scramble it. Make an eye-opening egg-stravaganza that's rolled up with shredded cheese, bacon and served with zesty CHI-CHI'S® Salsa.


1 tablespoon vegetable oil

1 cup thinly sliced green bell pepper

1 cup thinly sliced fresh mushrooms

1/2 cup thinly sliced red onion

1 teaspoon minced garlic

6 large eggs, beaten

6 CHI-CHI'S® 8 inch Flour Tortilla Soft Taco Size

1 1/2 cups shredded co-Jack cheese

1 (12-ounce) package Hormel® Microwave Bacon, cooked and crumbled

Sour cream


1. Heat oven to 350°F. Lightly grease 13x9-inch baking dish.
2. In large skillet, heat oil over medium-high heat. Add bell pepper, mushrooms, onion and garlic. Cook, stirring frequently, 5 to 7 minutes or until vegetables are tender. Remove from skillet.
3. In same skillet, cook eggs, stirring frequently, 5 to 6 minutes or until soft scrambled. Stir in vegetables.
4. Spoon egg mixture down center of each tortilla. Sprinkle with cheese and bacon. Roll up. Place seam-side-down in baking dish. Bake 5 to 8 minutes or until hot. Serve with salsa and sour cream.
