Salsa-Seasoned Pumpkin Bread
It's easy to give your holiday pumpkin bread a little more punch. Just add a little CHI-CHI'S® Salsa to the mix.
1 1/2 cups sugar
1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin
1/2 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
1 1/2 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1. Heat oven to 350°F. Lightly oil and flour 8x4-inch loaf pan.
2. In large bowl, combine sugar and oil; mix well. Add eggs, 1 at a time, mixing well after each additon. Add pumpkin and salsa; mix well.
3. In medium bowl, combine flour, baking soda, salt, cinnamon and nutmeg. Add dry ingredients to pumpkin mixture. Mix just until dry ingredients are moistened.
4. Spoon pumpkin batter into pan. Bake 50 to 60 minutes or until wooden pick inserted near center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack.
