Roasted Pepper Salad

If you like peppers, have we got a recipe for you. Roasted bell peppers combined with tasty ingredients blended to peppery perfection.

Ingredients:

1 green bell pepper, cut in half and seeded

1 red bell pepper, cut in half and seeded

1 yellow bell pepper, cut in half and seeded

8 ounces mozzarella cheese, cubed

1 cup CHI-CHI'S™ Smooth & Spicy Picante Sauce Medium

1/4 cup olive oil

2 tablespoons balsamic vinegar

1/2 teaspoon salt

1/4 teaspoon coarsely ground pepper

Preparation:

1. Heat broiler.
2. Place bell pepper halves, cut-side-down, on broiler pan. Broil 6 to 7 inches from heat source 10 to 12 minutes or until uniformly blistered and charred. Cool; remove skins and cut peppers into 1/8-inch strips.
3. In medium bowl, combine bell pepper strips and remaining ingredients; mix well. Refrigerate 1 hour to blend flavors.
