Rice Ensalada

Prepare this savory, satisfying dish by combining the lively flavors of SPAM® Classic, CHI-CHI'S® Salsa and fresh bell peppers on a bed of hot, steaming rice.

Ingredients:

1 (12-ounce) can SPAM® Classic, cut into 1/2-inch strips

1 red bell pepper, cut into 1/2-inch strips

1 green bell pepper, cut into 1/2-inch strips

2 cups fresh or thawed frozen whole corn

1/2 cup vegetable oil

3 tablespoons CHI-CHI'S® Thick & Chunky Salsa Hot

1 tablespoon vinegar

2 cups hot, cooked rice

Preparation:

1. In skillet, cook SPAM® Classic and bell peppers over medium-high heat 7 to 10 minutes or until browned. Add corn; cover. Cook 5 to 7 minutes longer or until corn is tender.
2. Meanwhile, in small bowl, whisk together oil, salsa and vinegar. Serve warm SPAM® mixture over hot rice. Drizzle with salsa mixture.
