Quick Chicken Fajita Pizzas
Make a Mexican dinner that's a winner. An easy tortilla dish with shredded Mexican cheese and zesty, fresh bell peppers.
1 tablespoon vegetable oil
3 cups green, yellow and/or red bell peppers, cut into thin strips
1 red onion, cut into thin wedges
1 (10-ounce) can Hormel® Chunk Breast of Chicken, drained and flaked
1 (0.78-ounce) package CHI-CHI'S® Fajita Seasoning Mix
4 CHI-CHI'S® 9 inch Burrito Tortilla
2 cups finely shredded Mexican cheese blend
1. Heat oven to 400°F.
2. In large skillet, heat oil over medium-high heat. Add bell peppers and onion. Cook, stirring occasionally, until crisply-tender. Add chicken, 1/3 cup water and the fajita seasoning. Reduce heat to low. Cook, stirring occasionally, 3 to 5 minutes or until hot and flavors are blended. Stir in salsa and hot sauce, if desired.
3. Place tortillas on baking sheets. Top each with 1/4 of chicken mixture and 1/2 cup cheese. Bake 10 to 15 minutes or until tortillas are crisp and cheese is melted. Top with Mexican toppings, if desired.
