Muffaletta Rellenos

Try this easy, beefy dish made with shredded cheese and spicy bell peppers.


1 pound ground beef

1/2 cup water

1 (0.78-ounce) package CHI-CHI'S® Restaurante Seasoning Mix

1/2 cup chopped celery

1/2 cup chopped red bell pepper

1/2 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium

1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies, drained

1 (4-ounce) can sliced ripe olives, drained

2 cups shredded co-Jack cheese

4 large eggs

1/2 cup mayonnaise

1/4 cup milk

2 tablespoons all-purpose flour

1/2 teaspoon baking powder


1. Heat oven to 350°F. Lightly grease 12x8-inch baking dish.
2. In large skillet, cook beef over medium-high heat, stirring frequently, 5 to 7 minutes or until no longer pink; drain. Add water and seasoning mix. Cook, stirring occasionally, 5 minutes longer. Stir in celery, bell pepper, salsa, chilies and olives.
3. Spoon beef mixture into baking dish. Sprinkle with cheese.
4. In bowl, whisk together remaining ingredients; spoon over cheese. Bake 25 to 30 minutes or until puffed and golden brown.
