Mexican Spiced Turkey Tortilla Soup

This terrific turkey tortilla soup is spiced just right so that every sip tastes so delicious.


1 tablespoon olive oil

1 onion, finely chopped

1 (4.25-ounce) can CHI-CHI'S® Diced Green Chilies

1 tablespoon ground cumin

1 teaspoon dried oregano leaves

1 teaspoon chili powder

1 clove garlic, minced

1/2 teaspoon ground red pepper (cayenne)

6 cups water

1 (10-ounce) can diced tomatoes and green chiles

6 teaspoons Herb-Ox® Chicken Instant Powder

2 cups bite-size pieces cooked turkey breast

1 cup frozen whole kernel corn, thawed

1/3 cup chopped fresh cilantro

1 1/3 cups shredded Monterey Jack cheese

Tortilla chips


1. In large saucepan or Dutch oven, heat oil over medium-high heat; add onion. Cook, stirring frequently, 3 to 4 minutes or until softened. Add green chilies, cumin, oregano, chili powder, garlic and cayenne. Cook, stirring constantly, 1 minute longer.
2. Stir water, tomatoes and bouillon into saucepan; bring to a boil. Reduce heat to medium. Add turkey; simmer 3 minutes. Add corn; simmer 1 minute longer. Stir in cilantro.
3. Ladle soup into bowls. Sprinkle each serving generously with cheese and chips.
