Mexican Corn

Alone, corn is just too mellow of a fellow. It needs to hang out with some more exciting vegetable friends including life-of-the-party CHI-CHI'S® Salsa.


3 tablespoons butter

1 (10-ounce) package frozen whole kernel corn, thawed

1 red bell pepper, chopped

1 cup chopped zucchini

2 green onions, chopped

1/2 cup CHI-CHI'S® Thick & Chunky Salsa Mild

1 tablespoon chopped fresh cilantro


1. In large skillet, melt butter over medium-high heat. Add corn, bell pepper, zucchini and onions; cook 6 minutes or until tender. Stir in salsa and cilantro. Cook 1 minute longer or until heated thoroughly.
