Mexican Chicken Salad

When you make this chicken salad, here's a tip: you're going to need a big bowl to contain a taste this large.


1 pound boneless, skinless chicken breasts, cooked and shredded

1 cup CHI-CHI'S® Thick & Chunky Salsa Mild, drained

2 hard-cooked large eggs, peeled and finely chopped

1/2 cup sour cream

1/4 cup mayonnaise

2 tablespoons finely chopped onion

1/2 teaspoon grated lime peel

1/2 teaspoon chili powder

1/8 teaspoon ground cumin

6 large lettuce leaves


1. In large bowl, combine all ingredients except lettuce; mix well. Serve salad on lettuce leaves.
